When asparagus gather egg yolks in a very exquisite manner, you should be sure that it is all about a very healthy and nutritive plate.
- 1 tablespoon olive oil
- A pinch of chili
- A pinch of paprika
- 20 asparagus spears
- 4 medium eggs
In a frying pan, heat the olive oil. Add the asparagus and coat with the chili and paprika and a little salt, frying for a minute on each side. Remove the asparagus spear from the frying pan and add them to a saucepan of boiling water for 3 minutes.
Whilst the asparagus is boiling, add eggs to the boiling water, also boiling for around 3 minutes. Drain the eggs and asparagus from the water, placing each egg in an eggcup. Serve each egg with several asparagus spears to dip in the egg yolk.
