Spiced Salmon With Corn Salad

Very nutritive and tasty plate that artily mixes salmon with corn salad.

Ingredients

(serves 2)

  • 1 garlic clove
  • ½ teaspoon of chili powder
  • ½ teaspoon of coriander
  • A pinch of ground cumin
  • Lime juice and zest
  • 2 teaspoon of rapeseed oil
  • 2 salmon fillets
  • 1 corn on the cob
  • 1 red onion
  • 1 avocado
  • 1 red pepper
  • 1 red chilli
  • Sliced coriander

Directions

Grate the garlic into a fine dust. Place the corn into a saucepan of boiling water for 8 minutes. Remove the cob by draining the water and using a knife, scrape the corn from the cob.

Mix the chili powder, coriander, and cumin with some lime juice and the garlic. Place this spice mixture in a sealable plastic bag and place the salmon within, shaking to coat. Set aside for several moments.

Dice the onion. Stone, peel and dice the avocado. Chop the red pepper into thin slices then remove the chili seeds and slice the chili. Combine the lime zest and the remaining lime juice with the onion, red pepper and chili. Add the corn.

Remove the salmon from the spice mix and fry on each side for 3 minutes. Serve the salmon with a portion of the corn salad.
