Breaded chicken fingers are a very much-appreciated dish in my family. I definitely do like to change up the type of breading I use so the kids or I do not get bored. This recipe asks you to use some cereals and a sweet touch, and I have to say, it is now one of my favorite!
- 1 pound chicken tenders
- 2 large eggs
- 2 tbsp. honey BBQ sauce (your favorite brand)
- 1½cup coconut flour
- 1½cup crunchy rice cereals (your favorite brand)
- 2 tbsp. coconut palm sugar
- Salt, pepper
- ½ tsp. ground all spice
- 3 tbsp. coconut oil
You will need 2 bowls to start with. First, place the rice cereals in a large Ziploc bag and use a rolling pin or your hands to crush them.
Mix the crushed rice cereals with the coconut flour salt, pepper, and allspice together in the first bowl.
In a second bowl, mix the eggs with the BBQ sauce. Heat the coconut oil in a large skillet. One by one, dip the chicken tenders in the egg mixture, then the flour mixture.
Cook in the hot oil and flip over after 7-8 minutes. Cook until the chicken is no longer pink but nice and golden. Serve with your favorite dipping sauce. My kids love Ranch sauce.
You can serve this dish with green or steamed salad.
