Blueberry Coffee Cake
Today we are going to make blueberry cake, also known as blueberry buckle, this dessert is just a great way to use fresh blueberries, it is a 2 layers dessert with a drizzled glaze at the top.
Now, the reason we have ‘coffee’ in the name in case someone is wondering after reading the ingredients is simply because it is suitable for serving with breakfast and best served with coffee. So, NO it does not have coffee in it.
How To Make a Crumble Topping ?
The topping is this sort of sugary, crumbly thing and at first is gonna look like a ton of sugar, I guess it is kind of it.
In a bowl put your flour and to that add granulated brown sugar and your cinnamon and then just whisk those together, do it with a fork or you can use your hands ( which I do prefer ) and then add your cold butter, you can use salted or unsalted either one and I like to cut it into small dice cubes because what we are going to do is cut the butter into the flour mixture so when it is in smaller pieces, it can be a lot faster and easier to do.
You can use your fingertips to blend the butter with the mix, just remember that what we are looking for is a mixture to be like coarse crumbs and don’t worry if there is a few big lumps of butter that’s fine.
Can I use Other Berries to Make This Coffee Cake?
yes you can use this recipe with other fruits : raspberries, blackberries and even slices of apple, I mean this is a really versatile recipe but I must admit that I am kind of partial to the blueberries
