Ingredients

(serves 4)

  • 2 packs asparagus
  • 150g salmon fillet
  • 8 medium cooked prawns
  • 100g baby spinach
  • 1 avocado
  • 1 cucumber
  • ¼ cup of extra virgin olive oil
  • 1 tablespoon of limejuice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon of brown sugar

Directions

Gently fry the asparagus over a teaspoon of olive oil for a few minutes on either side. Stone, peel, and dice the avocado flesh. Slice the cucumber into chunks. Flake the salmon into pieces. Combine the asparagus, avocado, salmon, prawns, and cucumber in a bowl.

Stir the remaining olive in with the lime juice, red wine vinegar, and brown sugar to create a dressing.
